Service charge in restaurant bills

Dear sir / madam,

I am often confused to see the sevice charge levied in many restaurants on their bills.

This is not acceptable as our bill value goes more than what we calculated. Once I asked the reason for charging the service charge to a restaurant person and his reply was " it is our company rules and you (customer) has to pay the service charge amount ".

Also I found that they charged VAT on that service charge also. Their service was poor and taste was also not that good and wew totally unhappy with their food.

Now my questions are

"whether it is mandatory to pay the "service charge" amount?

Can we tell NO to pay the amount?

What are the legal things should we know(customers) about laws to go for debate with restaurant owneres to avoid paying the service charge amount?
