Who has informed you that a plant, the affidavit has to be signed before such Oath Commissioner?

The affidavit can also be signed before another  Advocate, that has not filed the original suit.

This is followed by affidavit as PW1 during the trial.

First take care to file Counter, it is the duty of the Court to accept it or not, on your part you can take care of facts and law in filing counter and if your advocate advises you, raise this as an objection.

The procedure prescribed for verification varies from State to State. An affidavit could be signed before any authorised to administer Oath such as Magistrate(Executive or Judicial), Notary, designated Oathe Officers.Rules of Procedure in force in some States authorise any advocate.
