FSSAI is abbreviated as the Food Safety and Standards Authority of India. The license issued by FSSAI is not only a license to run your restaurant but also a legal document representing the approval by the authority. Basically, the FSSAI licenses are divided into three categories, based on the revenue generated by a restaurant per year.

Therefore, the major difference between FSSAI State License and FSSAI Central License is the difference in turnover. Those business having a turnover in the range of Rs.12 Lakhs to Rs.20 Crore can opt for FSSAI State License. Those having turnover above Rs.20 crore have to obtain FSSAI Central License.
