I am working as a laboratory assistant
( class -3) in Gujarat state government office diploma college, and I am 56 year old . My question is can I exampted in election duty. ?

It's a call on duty.No exemption. Refusal attracts discipinary action.

A government servant is bound to duty for 24 hours. Any order passed by higher officials to attend duty even in holidays or out of office hours, a government servant cannot refuse it. so you have to attend to Election duty. otherwise severe drastic disciplinary action will be taken against such government servant by the Election Officer.

Disicplinary Action
It is the Election Office not the deptt who has to decide punishment.
Criminal action
Punishable by two years imprisonment.

The query is very very vague. You have not stated the ground on which you want to be exempted.
Further the exemption can be there is your deptt provides a substitute.
or else
purely a matter of discretion of the District Authorities.

Very well advised by experts, I fully agree, despite the fact it is vague question without substantiating reasons for non-performing statutory duty.
