Hello,
I am from Tamilnadu. I changed my name in Gazette a few months ago. But I haven't changed my old name in my Ration Card, Pan Card and Voter ID yet. Now, can I sign my old name in legal documents like agreements, NOC etc...? Will it be legally accepted? Or can I sign my new name and just show my gazette copy as a proof. Please clear my doubt at the earliest.

Yes, you can start using the new name and on the basis of Gazette notification you can apply for change of your name as appearing on the public records.

You can not use your old name, after the change in the gazette.
Change your records according to the gazette publication.
Untill then sign the new name, for clarification you can produce the certificates for name change.

New name alone is valid now.
But practically, it is tough to convince others to understand it.
However, you have to manage the situation.
