How to get his name recorded as owner after his father's death in Sub Registrar's Office?

since your father died intestate in order to transfer the property , a legal heir certificate will have to be produced at the time to mutation.

In your case you cannot register your name in the sub-registrar office. You should have to secure your name in the concerned revenue office/municipal corporation. In the said process you should have to produce genealogical tree and death certificate together with affidavit stating that your the only legal heir to succeed to his property.
